Making (more) Rocky Road

It's Christmas time, so it must be time to make Rocky Road. 

Normally I put some silicone paper at the bottom of a pyrex dish. However its sometimes a little awkward to remove. So this time I decided to use my silicone bakeware. I also chopped up some Bounty Bars. Honestly I don't think you can tell -fun though. 

And this is how I did it...

1pkt unsealed peanuts
1/3 cup unsalted cashews*
1pkt mashmellows
1pkt raspberries
6 mini Bounty bars **
2/3 cup desiccated coconut
250g 70% dark chocolate

*or replace peanuts and cashews with 1pkt unsalted mixed nuts
** optional


 
I found that using a silicone cake mould, made removal much easier. Otherwise use a dish lined with silicone baking paper.
